The problems of food are marked by a lack of healthy feed that has affected in the health status of the indigenous population has had the need to restore what once was considered the drink of the gods, chicha source of many nutritional values. To determine the basic recipe for the preparation of chicha and quinoa were surveyed beneficiaries of the project which yielded the formula and proceeded to its development. It has held thirty-six formulations were observed for thirty days, which at the end of the period, physical and organoleptic were selected for the four formulations chicha F1 (chicha to the environment without preservative), F7 (chicha to the environment with preservative), F10 (chicha refrigerated without preservative), F16 (chicha refrigeration with preservative), and four formulations for quinoa chicha F19 (quinoa chicha to the environment without preservative), F25 (quinoa chicha to the environment with preservative), F28 (quinoa chicha refrigerated without preservative), F34 (quinoa chicha cooling preservative). |
