Streszczenie:Café Aguila de Oro is an Ecuadorian organization located in Quito city and dedicated to sell grain o ground coffee for more than 50 years, it has trained and experience staff in the world of coffee. The organization is considered high risk because it has machines, equipment and tools that to present a hazardous condition. Also, some work activities present incorrect postures for the worker, and it has repercussions in his efficiency. The affectation of occupational accidents and illnesses for no security and health measures could affect in the increase the absence of people’s work. To solve the problem, it comes to design an occupational health and safety system for to manage organized and systematic activities and to improve working conditions, to reduce the probability of occurrence of claims and comply with the Ecuadorian law. It is established that an initial diagnosis of the organization for to compile information and to proceed with a qualitative assessment of occupational hazards, it is the matrix. Next I to give priority the risks and measure it, principally: work noise, inadequate lighting and incorrect postures in grain classification or toasted. I study if the values are above of permissible limits, and I design the operational controls and it will is in an occupational health and safety system. The management system must be based in four fundamental topics: administrative management, technical management, human talent management and operating processes.
