Differences were observed between the samples, with germinated quinoa showing an increase in fiber content (5,36%) but a decrease in fat (2,27%), ash (1, 86%), and protein (8, 51%). Additionally, the germination process decreased the levels of micronutrients such as calcium (56, 01%), iron (3,29%), and manganese (1,80%). In contrast, non-germinated quinoa exhibited an ash content of (2,74%), fat content of (3,78%), fiber content of (3,24%), protein content of (9,24%), calcium content of (56,50%), iron content of(3,30%), and manganese content of (1,91%). Therefore, based on this study, germinatedEn este proyecto de investigación se utilizaron dos tipos de muestras, la quinua germinada y no germinada, para la quinua germinada se utilizó el método por brotes, el cual permitió establecer las características de un germinado natural para un adecuado proceso de crecimiento de la plántula, Rey (2020). Posteriormente en las dos muestras en estudio se determinaron las propiedades fisicoquímicas como ceniza, fibra, grasa, proteína, calcio, hierro, y manganeso, en la cual se establecieron diferencias entre los sujetos de estudio, indicando una ganancia de fibra (5,36%) al germinarse la semilla, pero una disminución entre las propiedades de grasas (2,27%), cenizas (1,86%) y proteína (8,51%).También se verificó que en el proceso de germinado disminuye la cantidad en micronutrientes como calcio (56,01%), hierro (3,29%) y manganeso (1,80%). Mientras que la quinua sin germinar obtuvo un porcentaje en cenizas (2,74%), grasa (3,78%), fibra (3,24%), proteína (9,74%,), calcio (56,50%), hierro (3,30%), y manganeso (1,91%).
