This work is a study based about ancestral esmeraldeña customs with the purpose of knowing its incidence in the collective imagination of the population from Esmeraldas through the years. To speak of imaginary is refering to the Emeraldeña gastronomy as an ancestral identity symbol which it has come to be affected by appearance of fast food. According the methodological process, the main factors which influence food consumption decisions were described, these were based on the collective imagination, the research design was non-experimental, due to the variables were not manipulated, the data collection techniques were also detailed Specific information of the inhabitants of the parish studied and experts in the area through a survey questionnaire and interview guide. The research carried out determined that there are two factors that influence the collective imagery of Emeralds: the prices and the flavor that make a difference between two types of food. In the traditional point of view there are high-cost dishes while fast food provides products that are adaptable to all consumers; the flavor is another element that influences, for the elaboration of the typical dishes they use own elements that there are in the place, this makes a different and unique food. I have concluded that: the emergence of new habits, this ancestral tradition is an identity symbol that is still preserved.
