Sumari:In our country the Organic Law of Health cites in its article 131, that compliance with the Good Manufacturing Practices (GMP) standards will be controlled and certified by the national health authority, in this case the National Agency for Regulation, Control and Health Surveillance (ARCSA), institution that establishes the guidelines and requirements through the Sanitary Technical Regulation for Processed Foods. Therefore, the present work was developed in the company: Molinos Anita, where a manual of BPM was elaborated based on the requirements of regulation with resolution: ARCSA-DE-067-2015-GGG. The compilation of the information was carried out in the plant through the application of the Checklist granted by the ARCSA jointly with the Ministry of Health, whose data showed the reality of the company in terms of compliance with this regulation, for the weighting was based on instructional IE-D.2.1-EST-04 of "OIA". The results obtained in the initial study were: 57.5% compliance and 42.5% non-compliance. Based on the results, corrective actions were taken in the short, medium and long term in order to implement feasible actions. Once these actions were carried out, to the final control, where 46.3% of the detected non-conformities were improved, achieving 77.2% compliance in terms of requirements. Without reaching the minimum level of 80% compliance for the certification according to the ARCSA. As a result, it is recommended to continue working on the improvement actions.
