Determinación de Salmonella sp. en vísceras y músculos de pollos en sitios de faenamiento de Riobamba

ABSTRACT: Salmonella sp is a highly gram-negative bacterium from the Enterobacteriaceae group, which is one of the causes of entenc diseases such as salmonellosis and diarrheal infections in humans worldwide. The purpose of this study is to determine Salmonella sp. In the viscera and muscles of chickens, which were samples obtained from slaughter sites in the Maldonado parish in the city of Riobamba. This study was a cross-sectional, descriptive, mixed-approach with a nom experimental field design. The observation was a technaque used, and Sample collection was collected from nine slaughter points for the mvestigation. For the isolahon and identification of the bacteria, enrichment media, Salmenella Shigella Agar, MacConkey Agar, and their respoctive mnterpretation cef biochemical tests were used to determine the bacteria isolated by genus and species, followed by this procedure, tie Kirby Bauer methed Of the 50 samples collected in total, SIx species of enterohactena of clunca impurtance were found. 48% corresponds to Citiobucter freundi, 40. belongang to Proteus mirabilis and Proteus Vulgaris, 4. for Citrobacter diversius, with low percenta ges af this Klebsiella oxytoca and Enterobacter acrogens with 2, the majernty showed bacterial resistance To conclude, Salmonella and no subspecies of it were not identificd, which means that the eity of Riobamba has adequate hygiene measures at the slaughter sites
