Streszczenie:The rate of malnutrition in the Ecuadorian older adult population reaches approximately 20%, with a significant challenge among indigenous women living in rural areas of the highlands. The ageing process is uneven and multiple and often varies according to the individual; therefore, the present research paper aimed to analyse the influence of dietary habits on the health of older adults based on a literature review. It was based on a systematic and applied methodology developed through a bibliographic study and a selection of scientific articles related to the evaluation of the influence of dietary habits on the health of the elderly. The main results indicated that the nutrition of older people is influenced by biological, individual, cultural, social, psychological and economic factors, which affect both access to and selection and consumption of food. The need to improve nutrition and promote healthy habits to prevent diseases related to malnutrition and ageing was highlighted. In addition, educating about the adoption of regular eating habits is essential to improve the overall wellbeing of older adults. It is crucial for nurses to be proactive in assessing and adjusting diets to prevent nutritional deficiencies and promote optimal health in their patients. In conclusion, the importance of a holistic approach to addressing the dietary needs of older adults, involving the participation of nurses and other health professionals, was highlighted.
