description The production and marketing of cocoa at the country level constitutes one of the most important items within the economies not only of large producers but of medium and small producers located throughout the country: coast, mountains and east. The province of Zamora Chinchipe has the climate (temperature, relative humidity, environmental biodiversity, among others) that would be considered as comparative advantages for the production of quality cocoa. The present work, in the diagnosis made, identifies a series of shortcomings in the post-harvest handling of the product itself that not only require management solutions of the fruit already harvested but also of the technical-productive reorientation at the level of the cocoa production units, specifically In the production process. Post-harvest technical management alternatives are considered, considering that the product conditioning tasks from the harvest such as: classification, drying, fermentation and more employment techniques become strategic activities to meet the market requirements, manifested in various rules governing marketing, especially external. Keywords: Economies, biodiversity, comparative advantages, quality, UPAS (s), production systems, conditioning techniques, standards, external markets.

Keywords: Economies, biodiversity, comparative advantages, quality, UPAS (s), production systems, conditioning techniques, standards, external markets.La producción y comercialización de cacao a nivel de País constituye uno de los rubros de gran importancia dentro de las economías no solo de grandes productores sino de medianos y pequeños productores ubicados a lo largo y ancho del País: costa, sierra y oriente. La provincia de Zamora Chinchipe posee el clima (temperatura, humedad relativa, biodiversidad ambiental, entre otros) que se considerarían como ventajas comparativas para la producción de un cacao de calidad. El presente trabajo, en el diagnóstico realizado, identifica una serie de falencias en el manejo pos cosecha del producto mismas que no solo requieren soluciones de manejo del fruto ya cosechado sino de la reorientación técnica - productiva a nivel de las unidades de producción cacaoteras, específicamente en el proceso productivo. Se plantea alternativas técnicas de manejo pos cosecha, por considerar que, las labores de acondicionamiento del producto a partir de la cosecha como: clasificación, fermentado, secado y más técnicas de empleo vienen a ser actividades estratégicas para ajustarse a los requerimientos del mercado, manifestados en diversas normas que rigen la comercialización, especialmente externa.
