| Gaia: | The commercialization of vacuum-packed fruits and vegetables in Loja was evaluated to increase their conservation and reduce food waste. Extensive research was carried out, covering the collection of data on the local market, consumer preferences and business conditions. The methodology used was mixed, including surveys and interviews with store owners and suppliers. 2,057 people with active RUC were identified in the SRI, with a total sample of 335 people to be surveyed and 25 fruit and vegetable suppliers, obtaining information on purchasing habits and preferences for vacuum packaging. The results indicated a potential market in Loja, where store and micromarket owners look for fresh, quality products to extend their useful life. The Technical study defined the size and location of the project, while the economic study evaluated costs, income, break-even point and financial statements. The total investment in the project will be $35,208.38, with contributions of $11,208.38 from partners and $24,000.00 financed by a bank at a preferential rate of 12%. The financial and feasibility analyzes showed that the project is feasible and profitable. The projected results include a Net Present Value (NPV) of $61,430.70, Internal Rate of Return (IRR) of 61.88%, Capital Recovery Period of 2 years, 8 months and 13 days, and a Benefit Cost Ratio of $1.24. The Sensitivity Analysis indicates that the project is insensitive to sudden changes, which requires risk mitigation strategies. These results offer a sustainable opportunity for small businesses, identifying key aspects for the management and promotion of vacuum-packaged products. In conclusion, this project demonstrates that the commercialization of vacuum-packed fruits and vegetables is feasible and contributes to the reduction of food waste in Loja. |
