Тойм:Post-harvest losses of beans (Phaseolus vulgaris), a grain considered a fundamental part of the diet of producers in the Malacatos parish, not only in the province of Loja but throughout the country, become a priority. The objectives are based on the study or post-harvest diagnosis, causes and effects to subsequently suggest a management proposal that solves or at least significantly reduces grain losses. The problem focuses on control starting from the harvest, especially in the management of moisture content and infestation; Losses are accentuated in the storage phase, previously, at the time of conditioning (cleaning, drying and curing) of the grain for storage and during maintenance. The grain curing process deserves special attention, because it presents a series of aspects, such as: ways of handling chemical inputs, types of chemicals used, basic ignorance of them, infrastructure for curing, among others. Consequently, the proposal revolves around the aforementioned, especially in the adoption of alternative infrastructure for the conservation and maintenance of the quality and safety of the grains as well as in the forms of post-harvest handling of the product. The adoption of technology, along with the prior efficient handling of the product, will effectively contribute to food security, specifically for the families of producers who constitute the highest percentage of residents of the rural sector.
