Yhteenveto:The El Tambo parish is characterized by having a high agricultural potential, however, the poor application of disinfection techniques during post-harvest handling has increased the levels of deterioration of the products, affecting their quality and safety. The purpose of this research is to determine the optimal disinfection factors by applying Bioperac in passion fruit, lemon and avocado fruits; To meet this objective, preliminary tests were carried out using 5 concentrations of disinfectant (0,25; 0,50; 1,00; 1,50 and 2,00%), then the definitive treatments were established: 1.00% for passion fruit; 0,25; 0,50 and 1,00% for lemon; and 0,25; 1,00 and 2,00% for avocado; and the quality characteristics were evaluated according to the organoleptic, physical-chemical and microbiological parameters. The results obtained show that there are significant differences between the control treatment and the treatments subjected to disinfection, in all the products; the application of Bioperac allowed the samples to preserve the organoleptic attributes, chemical composition and microbiological characteristics within the established norms and limits. The shelf life for passion fruit and avocado was 35 days, while for lemon it was 49 days; whose optimal disinfection factors in the best treatments were: 1,00% Bioperac, contact time of 3 minutes, refrigerated at 7 ºC and packed in polyethylene (lemon) and polypropylene (passion fruit and avocado) bags. On the other hand, the production costs for passion fruit (1000 g) were 0,83 US dollars; 1,11 USD in the case of lemon (900 g); and 1,49 USD in avocado (1500 g). Finally, it was shown that the sales prices of passion fruit (1,04 USD), lemon (1,38 USD) and avocado (1,87 USD), using a profit margin of 25%, are lower than those offered by supermarkets in the city of Loja.
