description The storage of basic grains such as rice, corn, and beans in metal silos is a proven alternative technology with great impact in the rural sector. The objective of the present was, to verify both the infrastructure of metal silos and the behavior of the grain in terms of quality of a product with a commercial trend such as coffee, in the climatic conditions (warm - humid) of the eastern parts of the Amazon, as it is the canton of El Pangui. For this purpose, three small-capacity metal silos were designed and built, the grain was prepared for entering the silo (dry, clean, healthy and fresh) in three states (ball, parchment and green), considering the three forms of handling in storage by the producers and the respective technical follow-up was made. The results obtained during the test time, realized that the technology works, considering that the storage structure is an alternative technology, within the reach of the small producer's economy, easy to build, easy to handle and control the grain during the storage time and positive impact on the environment. It should be noted that, given their construction materials, the silos must be indoors and located in the coolest place in the house and without being exposed to heat sources. The quality analyzes carried out in the three states of the coffee, during the storage time, record data that does not differ significantly in the quality of the product, therefore, it is assumed that the use of metal silos for coffee storage is a good alternative for coffee producers and other agents in the coffee production chain. El objetivo del presente fue, verificar tanto la infraestructura de silos metálicos y el comportamiento del grano en cuanto a calidad de un producto con tendencia comercial como el café, en las condiciones climáticas (cálido – húmedas) de las zonas orientales de la Amazonía como es el cantòn de El Pangui. Para el efecto, se diseñó y construyó tres silos metálicos de pequeña capacidad, se preparó el grano para la entrada al silo (seco, limpio, sano y fresco) en tres estados (bola, pergamino y verde), considerando las tres formas de manejo en el almacenamiento por parte de los productores y, se hizo el respectivo seguimiento técnico. Los resultados obtenidos durante el tiempo del ensayo, dieron cuenta que, la tecnología funciona, considerando que, la estructura de almacenamiento es una tecnología alternativa, al alcance de la economía del pequeño productor, de fácil construcción de fácil manejo y control del grano durante el tiempo de guardado y de impacto positivo al medio ambiente. Cabe anotar que, los silos, dados sus materiales de construcción, éstos deben estar bajo techo y ubicados en el lugar más fresco de la vivienda y sin estar expuesto a fuentes de calor. Los análisis de calidad realizados en los tres estados del café, durante el tiempo de almacenamiento, registran datos que no difieren significativamente en la calidad del producto, por lo tanto, se asume que, el uso de los silos metálicos para el almacenamiento de café es una buena alternativa para los productores cafetaleros y otros agentes de la cadena productiva del café.
