Creación de una microempresa de producción de yogurt en la parroquia yangana, cantón y provincia de Loja

The present study on the creation of a micro-enterprise of production of Yogurt in the parish Yangana, Canton and province of Loja, is born from the idea of using the existing production of cow's milk that exists on several farms in the parish Yangana and they are engaged in direct selling and processing of by-products, such as yogurt, cheese and cheese, especially in the sectors Cachyacu, Surunguche, Masanamaca, Anganuma, jars, Maco, Jesús Sasara, San Gabriel and Suro. Where there are livestock progressives, that are dedicated for many years to this activity, but that in the future will be affected in artisanal industrialization and commercialization of their dairy products, by the new sanitary regulations of consumption of foods of animal origin, by the Ecuadorian agriculture (Agrocalidad) quality assurance agency, as a control for foodstuffs for human consumption to improve the quality of life of the consumer. Consequently the main objective of this project is the creation of a micro-enterprise production of Yogurt, as product that has great demand in the area, to be a national and international tourist territory and allowing them to farmers partnering forbest profits in its agricultural investments and a quality service to its consumers. Activity with which they can make sustainability and development dairy farming, which in turn allows them to increase their production, not only to supply the local consumption as planning but from other surrounding provincial markets. The methodology used in this work, allowed me to, some field activities as at first, identify the producers in the area, determine the current production of milk producer and farm and projecting such production to five years which includes the present study. The survey consumers allowed me to meet the demand for current and potential consumption of yogurt in a market Sectored as it is that of Malacatos, Vilcabamba, Quinara, characterized by the national rural tourism and foreign, which gave us a demand to more than 1,200,000 liters of yogurt per year, with which we were able to determine the size of the plant and the daily production capacity that calculation it is 300,000 liters of yogurt per year where begins with 80% of capacity of the panta so allow it the matter prima 5 existing and expected every year go by increasing its capacity to reach 100% of its capacity. The parameters listed above, in terms of supply and demand and the location of the ranches, allowed me to after an analysis, determine the location of the plant, the same that will be in the parish head of Yangana, which is the town closest to the places of production and roads of the first order, allowing a quick collection of the raw material and distribution of the product over to the different points of sale Parish that they were the subject of study. The financial study, shows us that there is a value added NET (VAN) positive that recommends investment, also an internal rate of return (IRR) exceeding the cost of capital in financial market trading, and the relationship benefit cost (RBC), in the same way it is positive to present an index of 1.6, being capital investment feasible, inasmuch as his recovery is on schedule. All this makes us conclude that there is the feasibility of implementing the micro enterprise according to the study, which is determined as detailed in the different chapters of this work.
