Sažetak:This current thesis project named "DESIGN OF A FOOD-PROCESSING TOURISTIC ROUTE FOR THE PARISHES CASANGA AND CATACOCHA OF THE CANTON PALTAS, PROVINCE OF LOJA" will allow the tourists to be part of a different form of doing tourism, being this new modality of the tourist rural area. It was carried out taking as a reference the mission and vision of the Tourist Administration Career, tourist training enterprising and compromised experts, with the purpose of contributing with the tourism development. To carry out the present research it was determined the following aims: to carry out a diagnostic tourism of the parishes Casanga and Catacocha of the Canton Paltas, province of Loja. It was possible to know the current situation of the external and internal zone of the parishes and to identify the most relevant attractions of the locality. To draw up the Food-processing Tourist Route of the parishes Casanga and Catacocha of the Canton Paltas, Province of Loja. In order to develop this aim, instruments were used as a system of geo-referencing for carrying out the mapping of the coordinates, time of journey and distances, and, a camera for digital support. For doing this, it was designed the proposal of making a map that includes the location of the attractions and tourist activities. The elaboration of an index card where the signs for the different attractions are specified according to the manual of the Department of Tourism of the Ecuador, which are necessary to fulfill the goals of the project. In addition, it was designed the brand and the slogan that will be shown in the project. Besides, an itinerary for the journey was elaborated following the order established in the same one. As last goal, it was set: to promote the Tourist Route for the Parishes of Casanga and Catacocha of Canton Paltas, Province of Loja, once designed the food processing tourist route, it was started with the strategies for getting to know the product, which can be presented as advertisement aids or souvenirs. The defined promotion will allow involving the different actors of the tourism; likewise, the Method of Rapid Analysis and Participative Planning (MARPP) was used for the socialization of the current research work, which was developed in the different parishes in study and to the Zapotepamba Center of Technical Training (CBFTZ); secondly, the results of the research work were presented; and the third one, where the conclusions and recommendations of the proposal were indicated. Finally, the conclusions and recommendations of the thesis work were set, which mention the importance of carrying out the project bringing a support for the tourist improvement of the parishes of Casanga and Catacocha. 6 It was established that the accomplishment of the current proposal will increase the economy of parishes, especially of the parish of Casanga since it is located in the rural area of the city of Catacocha; in this way, it was recommended that the local authorities like the parochial GADs’ bring the necessary support to expand the development of the proposal of the food processing tourist route with the purpose of catching a bigger amount of tourists, offering a good offer of attractive touristic places and typical food of the parishes of Casanga and Catacocha.
