| Résumé: | The sectoral diagnosis is a comprehensive analysis that allows evaluating the structure, dynamics and performance of an economic sector, identifying its opportunities and challenges, key information for strategic decision making. In this context, the present research aims to conduct a sectoral diagnosis of the activity of fast food restaurants, refrigerator stands and establishments offering take-out food, pizza delivery, ice cream parlors and soda fountains in the Loja canton, in order to analyze their business performance. For this purpose, a mixed approach was used, combining qualitative and quantitative methodologies with an exploratory, descriptive and cross-sectional design; deductive, inductive, analytical and synthetic methods were applied, together with observation, surveys and statistical analysis for data collection. The results show that the sector is concentrated in the urban area, with a strong preference for consumption among the young population; it is characterized by strategic location, speed of service and product diversity, although it faces challenges such as high competition. In financial terms, there is evidence of an average acid test of 1,81, positive working capital, inventory turnover of 14 times, indebtedness is maintained at 43%, with a profitability of 14,09% on assets and 25,19% on equity. Regarding non-financial indicators, delivery times that exceed the expected average were identified in approximately 50 % of the establishments, which may affect customer satisfaction, although product quality and staff service were well valued by more than 50 % of consumers. Finally, it is concluded that the sector has a high growth potential; however, an optimization in financial and operational management can improve its sustainability and competitiveness in the market. |
