Ամփոփում:This study evaluates the feasibility of establishing "Jamones Criollo," a company focused on the production and commercialization of cured ham in the city of Alamor, Loja province. In response to the growing demand for gourmet products, it was identified that 21% of local families regularly consume cured ham, while the current supply only meets 13% of that demand. "Jamones Criollo" aims to fulfill the unmet 87% of demand by producing and commercializing 720 pounds of cured ham per month, ensuring a consistent supply of high quality products. The research adopted a mixed-method approach, employing both descriptive and analytical methods. Quantitative and qualitative data were collected through consumer surveys and interviews with experts in the meat industry. The financial results indicate high feasibility, with a positive Net Present Value (NPV) of $60.730,00 and an Internal Rate of Return (IRR) of 29%. Additionally, projected annual revenues are $126.906,53, with an investment recovery period of two years, three months and twenty-one days, reaffirming the project's profitability and sustainability. "Jamones Criollo" not only seeks to meet market demand but also to contribute to local economic development. The company plans to generate employment and strengthen Alamor's economy by promoting high-quality products and establishing strong commercial relationships with suppliers and customers. The implementation of this project represents a significant opportunity to innovate in the cured ham market in the region.
