Summary:Chicken meat has become the most consumed food in recent years because its price is very affordable and because it is an excellent source of protein; therefore, handling from primary production to marketing must be safe for the consumer. For this reason, we proposed to evaluate the microbiological quality of raw chicken meat in the markets of Loja. We conducted a cross-sectional observational design in which we collected 24 samples from the market stalls and then performed a characterization in differential agars with identification through biochemical tests, obtaining the presence of Salmonella spp. in 8.33 %, Staphylococcus aureus in 4.17 % and absence of Escherichia coli; meanwhile, we determined a high count of mesophilic aerobes that exceed the limits allowed by national regulations. We established that the hygienic-sanitary quality of raw chicken meat sold in markets in Loja is poor because of the presence of pathogens harmful to public health.
