| Summary: | The present research work called " Estudio de factibilidad para la producción de queso artesanal en la comunidad de potrerillos, parroquia el Tablon, cantón Saraguro y su comercialización en la ciudad de Loja", was developed based on the existing overproduction of milk in the community of Potrerillos, Tablon Parish, Saraguro canton. Its main objective is to conduct a feasibility study for the production of artisan cheese in the aforementioned sector and the specific objectives related to the different studies such as: market, technical, administrative, financial and financial evaluation. The research area of this work is the city of Loja, using a methodology with a quantitative approach and a deductive method, related to exploratory research. Surveys were applied to 382 families from Loja and 321 commercial premises dedicated to the sale of staple products (food) with which an effective demand of 95% was obtained with an average annual consumption of 90 pounds of artisan cheese; and a supply of 3,162,227 pounds, resulting in an unsatisfied demand of 1,016,368 pounds of artisan cheese per year. Through the financial evaluation it was determined that the project has a net present value of $58,642.90, with an IRR of 74.07% positive value in relation to the opportunity rate, with a profit of $0.25 for each dollar invested, which allows recovering the investment in 1 year, 6 months and 4 days, in the same way this project can support an increase in costs of 12.70% and a decrease in income of 10.13%; data that allow us to determine that the project is feasible for its execution. |
