| الملخص: | Moringa (moringa oleífera) is a tree highly valued for its multiple uses, one of the most profitable parts are the seeds due to the oily properties they possess, allowing the extraction of oil for edible or industrial uses. Based on this, the currect investigation has the purpose of determining the optimal parameters of oil extraction from the moringa seed by means of the mechanical method; for this, four treatments were evaluated at different heating times of the equipment (expeller press) prior to its extraction; and then these oils were centrifuged to obtain a better quality, especially in the organoleptic characteristics, based on the results in which the yield is included, the best treatment was established, to which the quality of the oil was later evaluated through physical-chemical analysis, the production costs and sale price were determined as well. The results obtained indicate that the T3 treatment presents the best parameters for the extraction (heating time of the press of 25 min and 15 min of centrifugation at 4 000 rpm), resulting in a higher yield of oil (27,27 %) and presenting the best characteristics based on organoleptic analysis (color, smell and flavor). The results of the physical-chemical analysis were the following: density at 25 °C (0,91), peroxide value (0,08 mEq.O2 kg-1), acidity value (0, 43 % oleic acid), iodine value (75,02 cg g-1) and saponification value (176,79 mg KOH g-1) being within the appropriate ranges according to national and international standards for vegetable oils used in the food industry, such as oil made of olives. Lastly, the production costs for 500 ml of oil were USD 32,17 and the sale price USD 40,05, which is lower than what is sold locally (USD 90).
