总结: | This thesis focuses on the development, research, and enhancement of the competitiveness of the coffee processing microenterprise ‘La Marquesa’ through the implementation of Good Manufacturing Practices (GMP). The main objectives were: to assess the current processes carried out in the coffee processing operations of ‘La Marquesa’; to develop a comprehensive plan that includes the standardization of processes and the adoption of best practices; and to create manuals for operating procedures and protocols that ensure the proper maintenance and adequate functioning of the equipment used in coffee processing. The aim of all these actions was to improve and ensure that the products are produced under appropriate sanitary conditions, thereby reducing risks in both production and subsequent distribution. To achieve these objectives, a mixed-method approach was employed, combining descriptive and bibliographic research with field visits to gather the necessary information on the processes of the coffee processing microenterprise ‘La Marquesa’. The information was collected through surveys, checklists, direct observations, and multiple interviews with workers, operators, and the owners of the enterprise. This allowed for the identification of deficiencies in some of the production processes, leading to the design and proposal of a comprehensive improvement plan. One of the key findings was related to compliance with the National Technical Regulations on GMP, specifically the resolution (Executive Decree No. 234), published on January 20, 2023, under ARCSA-DE-2022- 016-AKRG. The checklist revealed one of the main areas of non-compliance: the lack of necessary documentation. This is a critical requirement, as the regulations emphasize the verification of records. Additionally, the microenterprise was found to be 75% compliant with the current regulations. However, it was determined that ‘La Marquesa’ did not have manuals for operating procedures and protocols to ensure the proper maintenance and functioning of the equipment, nor did it integrate these activities into the coffee production process. In conclusion, it was determined that the application of a theoretical framework to support the design of manuals and maintenance and operating protocols would be an essential tool in the development of the enterprise's productive activities.
