Samenvatting:In the present work, the design of a machine to prepare the sugar biscuit “bocadillo” mixture was carried out, the designed mechanism consists of three main systems: stirring and mixing by paddles, raising the beater, cooking and discharge. To define the physical qualities of the mixture, experimental processes were carried out, in this way, every single ingredient and the factor that affect the preparation were identified. The steps involved in the preparation of sweet biscuit “bocadillo” were identified through interviews and technical visits to companies dedicated to this activity. The mechanism design in its different stages was based on the Scoring method, material strength, mechanical design, fluid mechanics, and heat transfer; through this, the systems and main parts of the machine were determined. The mixer was designed for a 150 pounds capacity of sweet biscuit “bocadillo”, the size and thickness of the container (pot) was dimensioned; likewise, the agitator was designed and the gearmotor was selected with the required power to make the beating until reaching a homogeneous point of the mixture called caramel point. The pot and stirring system were designed to be constructed of SAE 304 stainless steel. The main component for the stirrer lift system consists of a power screw articulated to a crank to be operated. The cooking system has a burner for LPG. The container has a lever to empty the mixture. The structure of the mechanism was designed to be built in ASTM iron tube.
