First, similar or analogous machines such as dough and powder mixers are identified to recognize the mechanisms and parts that make them up, in addition to recognizing how they work, then the shape of the tank, type of mixer, cooling/heating system and control system to be designed are selected, taking into account maneuverability, mixing time and variables to control in the fermenter such as time and temperature. As for the materials, those available in the local market are used; stainless steel is required for the tank, while galvanized steel is required for the structure because it works with fluids and seeks to avoid the appearance of rust, in the water recirculation system a level hose, check valves and solenoid valves are used, while the control system is mainly made up of relays and a temperature controller, the systems were designed taking into account their future maintenance and validating their parts. Finally, to carry out the performance tests, 22 lb of pulped coffee are used, three performance tests were carried out with a time of 14 hours at different temperatures, the coffee was purchased from the city of Alamor, obtaining very good results in terms of the precision of the control of the fermentation temperature in the coffee during the 14 hours, verifying that the machine works correctly. En el presente trabajo se contempla el diseño, construcción y evaluación de un fermentador aeróbico de café con control de temperatura para mejorar el proceso de fermentación en el beneficio húmedo del café. Primeramente, se identifican máquinas similares o análogas como mezcladores de masa y polvos para reconocer los mecanismos y partes que las conforman además de reconocer como funcionan, luego se selecciona la forma del depósito, tipo de mezclador, sistema de refrigeración/calefacción y sistema de control a diseñarse, teniendo en cuenta la maniobrabilidad, tiempo de mezclado y variables a controlar en el fermentador como el tiempo y temperatura. En cuanto a lo que respecta los materiales, se utilizan los que se encuentran disponibles en el mercado local, para el depósito se requiere acero inoxidable, mientras que para la estructura acero galvanizado debido a que se trabaja con fluidos y se busca evitar la aparición de óxido, en el sistema de recirculación de agua se utiliza manguera de nivel, válvulas check y electroválvulas, mientras que el sistema de control se conforma principalmente por relés y un controlador de temperatura, los sistemas fueron diseñamos teniendo en cuenta su futuro mantenimiento y validando sus piezas. Finalmente, para realizar las pruebas de funcionamiento, se utilizan 22lb de café despulpado, se realizaron tres pruebas con un tiempo de 14 horas, el café fue adquirido de la ciudad de Alamor, obteniéndose resultados muy buenos en cuanto a la precisión del control de la temperatura de fermentación en el café durante las 14 horas, constatando que la máquina funciona correctamente.
