Sammanfattning:Thirty-six samples of bovine milk from the parish ‘Chicaña’, in the canton of Yantzaza part of the province of Zamora Chinchipe were tested using a TriSensor kit in order to detect antibiotic residues in fresh raw cow’s milk, a Porta SCC Milk kit to count the number of somatic cells and lastly, Lactoscan equipment in order to obtain the physicochemical properties of the milk. These studies were performed at the "Dairy processing pilot plant of the National University of Loja.” When using the TriSensor kit for antibiotic residues, the following results were obtained: 28.7% were positive and 71.3% negative. In each of the groups of antibiotics that this analysis identified, 9.26% were sulfonamides positive, 17.59% had the presence of tetracycline antibiotics and 8.33% were beta-lactamase positive. In regards to the physicochemical analysis using Lactoscan equipment, the following results were obtained: fat 3.06%, non-fat milk solids (NFMS), 7.69%; density, 1.03Kg/lt.; 10.8% total solids content; 4.25% lactose; 0.64% minerals, 2.87%, proteins; 1.61% water added. Samples were received at an average temperature of 14.3ºC; freezing point is -0.485ºC; pH of the samples 6.75, electrical conductivity of 4.99 millisiemens per cubic centimeter (mS/cm) and an average acidity of 17.4º Dornic (ºD). In relation to the somatic cell count using the Porta SCC Milk kit, 1.06 x 106 was obtained. The results showed that the Ecuadorian INEN technical standards regarding residual antibiotics, addition of water, somatic cell count and freezing were not met. On the other hand, the percentages of non-fat milk solids, density, total solids content, lactose, minerals, pH, proteins and water added are close to or within the range provided by INEN standards.
