| Yhteenveto: | Gastronomy in the city of Loja constitutes a relevant point within the local tourism sector. The city is the annual host of Festival de las Artes Vivas, is a benchmark in the national touristic sector, that is the reason why third-category restaurants should maintain a high level of digital innovation. Digitalization in restaurants is a relevant characteristic so that international tourists have a good perception of the establishments. Due to this, the need arises to research about this topic in the city of Loja. Thus, the following general objective was proposed: "To evaluate the level of digitalization of the food and beverage companies with 3- fork category in the City of Loja". To accomplish this objective, the current state of digitalization of the companies was determined, and a plan was established to strengthen digitalization in the activities of the customer service area. The methodology used the analytical and deductive method to obtain and analyze data, thus leading to the construction of results. Similarly, direct observation techniques and interviews with key stakeholders were used, also survey techniques to identify consumer preferences, and the technologies to be considered for the strengthening plan were selected. As a result, it was obtained that the level of digitalization of the establishments is very basic. It was concluded that despite the very basic level of these establishments, it can become an opportunity to adapt new technologies to the restaurants in the city of Loja. On the other hand, it was concluded that the best option to digitalize the establishments will be with the creation of an App to facilitate processes. |
