Sumari: | The proposal for the use of new techniques in post-harvest management for the production of specialty coffee in the 'San Martín' Association of the Capiro Parish, Piñas Canton, is a crucial step towards improving coffee quality. Based on the results of surveys and interviews, the willingness of the association's members to adopt changes and optimize existing processes is highlighted. The majority of respondents show a solid knowledge of current techniques, but recognize the need for improvements, especially in natural drying, where the implementation of canopies is proposed. The proposal reflects a desire to improve methods to enhance sensory quality, increase added value and differentiate the product in the market. The positive and proactive attitude of the association suggests a significant commitment to the exploration of new practices, aiming at benefits such as improved quality, prices, income and quality of life for the producers |
