| Summary: | Pork is a food of animal origin that is widely consumed both for its nutritional quality and its accessibility; it is also considered part of the food sovereignty of the people and is an intrinsic part of gastronomy; therefore, it must comply with several health requirements, since it could generate considerable problems to public health; the objective of the study was to determine the hygienic and sanitary quality of raw pork sold in the markets of the city of Loja; for this purpose, we carried out an observational study in which we collected 24 samples of raw pork at the market sales sites, we performed microbiological cultures, and we determined the presence of Escherichia coli and Salmonella spp. in 4.16% of the samples; there was no presence of Staphylococcus aureus, while mesophilic Aerobes exceeded the parameters recommended by INEN 1338 (10-6 / 10-7). Therefore, the hygienic and sanitary quality of raw pork sold in the markets of the city of Loja is deficient.
