The research had a cross-sectional observational design in which 24 samples of pork were collected from the spending sites located within a market in Loja. The presence of Escherichia coli, Salmonella spp. and Staphylococcus aureus through cultures and obtained by biochemical tests, additional colony-forming units per milliliter (ufc/ml) for mesophilic aerobes were counted according to the INEN 1338 regulations. The presence of Escherichia coli and Staphylococcus aureus was found in 8.33%, Salmonella spp. in 12.5% and mesophilic aerobes in values greater than 1.0 x 107 cfu/ml. In conclusion, the raw pork meat from the Loja market has bacteria and a count higher than what is allowed according to the food sanitation regulations in force in the country. Por lo tanto, el objetivo de este estudio fue determinar la calidad microbiológica en carne de cerdo expendida en un mercado de Loja. La investigación tuvo un diseño observacional de corte transversal en la que se recolectaron 24 muestras de carne de cerdo de los sitios de expendio ubicados dentro de un mercado de Loja. Se analizó la presencia de Escherichia coli, Salmonella spp. y Staphylococcus aureus a través de cultivos y se confirmó mediante pruebas bioquímicas, adicional se contabilizó las unidades formadoras de colonias por mililitro (ufc/ml) para Aerobios mesófilos de acuerdo a la normativa INEN 1338. Se encontró la presencia de Escherichia coli y Staphylococcus aureus en un 8,33%, Salmonella spp. en 12,5% y Aerobios mesófilos en valores mayores de 1,0 x 107 ufc/ml. En conclusión, la carne cruda de cerdo del mercado de Loja presenta bacterias y un recuento superior a lo permitido de acuerdo a la normativa de sanidad alimentaria vigente en el país. Se recomienda realizar un estudio de trazabilidad para identificar el origen de la contaminación de la carne.
