Riassunto:The present research had as a main aim the determination of the present flavonoids and the antioxidant activity of the Ilex guayusa (Loes.) species, for which, phenols and total flavonoids were quantified by spectrophotometric methods obtaining values of 22,44 and 7,50 mg/mL respectively in the hydroalcoholic extract of Ilex guayusa to 50% that showed a mayor amount of these compounds. Green tea (Camellia sinensis), which acts as a natural referent of comparison in this study, exposed a higher concentration of phenols in front of Ilex guayusa, however, to analyze the flavonoids concentration, Ilex guayusa presented a higher percentage than green tea. Likewise, the antioxidant activity valoration by the DPPH method had an average inhibition rate (IC̅50) of 23,850 μg/mL, showing that Ilex guayusa has a greater capacity to scavenging free radicals than green tea and ascorbic acid. The methods of Thin Layer Chromatography (TLC) and High Performance Liquid Chromatography with Diode Array Detection (HPLC-DAD) allowed the identification of 8 possible flavonoids of which 4 was detected by TLC: quercetin, hydroxyflavone, 3-O-galactoside of quercetin and apigenin while the Gas Chromatography coupled to masses (GC/MS) detected the presence of 4 flavonoid molecules: 3',4'-dimethoxyflavonol, 3-hydroxyflavone, tectocrisin and canferol through the derivatization by silylation.
