To carry out this work no experimental design was not used, since only is to evaluate and compare the results with established standards which allow presenting if these samples are within the established range of good quality or otherwise determine those do not meet the standards. In analyzes of pasteurized milk, it was determined that these meet the range specified in the INEN standards, still well below the established, so does the UHT milk, which show zero ranges or well below these wellbeing of excellent quality milk and good phytosanitary control. Regarding the analysis of antibiotics work samples determined that both pasteurized and ultrapasteurized were positive and in this area is determined that there is no adequate control for both processes. |

Regarding the analysis of antibiotics work samples determined that both pasteurized and ultrapasteurized were positive and in this area is determined that there is no adequate control for both processes.El objetivo de esta investigación fue la de analizar distintas marcas de leche previamente establecidas, mediante encuestas dirigidas a madres de familia quienes aporten con las muestras esenciales y de mayor consumo, con el fin de conocer la calidad de un alimento de consumo diario y masivo. Para la realización de este trabajo no se utilizó ningún diseño experimental, ya que solo consiste en evaluar y comparar resultados con normas ya establecidas las cuales permite dar a conocer si estas muestras se encuentren dentro del rango establecido de buena calidad o caso contrario determinar aquellas que no cumplan con las normas. En los análisis de leches pasteurizadas, se pudo determinar que estas cumplen con los rangos determinados en las normas INEN, estando por debajo de lo establecido, lo mismo ocurre con las leches UHT, las cuales nos muestran rangos nulos o por debajo de estos, siendo así leches de excelente calidad y un buen control fitosanitario.
