Propuesta de un plan de Producción más Limpia (PML) para reducir el consumo de agua en la línea de producción de queso en la empresa de lácteos “El Tambo” cantón Cayambe

This research proposes the implementation of a Cleaner Production Plan (PML) to reduce the consumption of water in the cheese production process of the dairy processing company "El Tambo". The dairy industry is characterized by consuming many quantities of water, being the indirect use in secondary operations greater than the expense of water directly in the process. The inefficient use of the water in the cheese production line is estimated to be 1 009.2 m3 / year. The causes with greater incidence in the use of the water, correspond to the services of general cleaning and to the reception process of the auxiliary activities. For this reason, it’s important to have a preventive environmental management strategys; like this research. The objective of PML is to achieve the extreme efficiency of water consumption, through the sustainable corrective and preventive measures. The study’s methodology was delimited by five phases: 1) Planning and organization, the manager authorisation was obtained and the scope was defined; 2) The pre-evaluation, the initial situation of the company was evaluated and the water consumption was calculated; 3) In the evaluation, it was determined that processes or services consume more water volume; 4) In the generation options, the plan of "Saving and Efficient Water Use" with the proposed measures is estimated that the saving of water is of 60%; 5) Finally the PML proposal is indicated.
