Περίληψη:The main objective of this research was to estimate the Carbon Footprint in the Quinua crops (Chenopodium quinoa) of the cantons Cayambe and Riobamba located in the Ecuadorian Andes. The study carried out the Greenhouse Gas Inventory (GHG), which followed the 2006 IPCC Guidelines for the AFOLU sector and Energy, for the Life Cycle Analysis (LCA) of quinoa, the inputs and outputs were collected from soil preparation to waste management in the agricultural phase. Data were collected through interviews, field observations, analysis of soil samples and fertilizers. The physicochemical parameters that are part of the estimation of the carbon footprint (HC) were analyzed. For the calculation, the data were tabulated in Excel, which contains the activity data and emission factors. Cayambe and Riobamba emit 468.56 kgCO2eq/ha and 425.38 kgCO2eq/ha respectively, this is mainly due to the use of fuels and fertilizers. The percentage of Organic Carbon present in the soils of Cayambe fluctuates between 1,68-2,80% and in Riobamba 1,86-2,26%. In the energy balance there is evidence of a positive efficiency in quinoa production with a total consumption of 5268.03 and 5100.87 MJ/ ha in Riobamba and Cayambe respectively. The importance of estimating this indicator of the environment is to know CO2 emissions from agricultural production contribute to sustainable development and promote the eco-labeling of Andean products.
