Yhteenveto:Iodine is an essential micronutrient for the functions of the human organism. The lacking of this is actually recognized as the principal cause of disability that can be prevented. According to World Health Organization (WHO) among the most frequent disorders for the lacking of Iodine are: Hypothyroidism, goiter, cretinism and serious problems in pregnancy. The problem that this study focuses is the acknowledgement of the consumer about the characteristics of the salt; therefore, there is a breach of the NTE-INEN 0.57: 2010 by the salt companies. In the present study it was evaluated the physicochemical parameters in three salt’s brands of major national selling and consuming in the Continental Ecuador. The methodology applied was qualitative and quantitative. The method was analytic; sample used was of non-probability convenience. The model used was the experimental one 3x2x3, the samples were evaluated in (INSPI) National Institute of Public Health Research laboratories and in The Offers and Products (OSP) Laboratory. It was analyzed the chemical salt’s components as: Iodine, Fluorine, Humidity, Sodium Chloride, Insoluble Residue, Substance Dehydrant, Calcium, Magnesium and Sulfates. The outcome of the evaluated brands gave the next data: Brand M1 doesn’t comply at all with the next parameters: Iodine average 13.89 ppm. Humidity average 0.56%, fluorine 0 ppm., Calcium average 157.84 ppm, Magnesium average 1108.21 ppm; brand M2 doesn’t fulfill with the parameter of fluorine average 198.53 ppm, Calcium average 1381.50 ppm, and the brand M3 doesn’t fulfill with the parameters of fluorine 0 ppm and Magnesium average 2690.96 ppm according to the (NTE INEN 057:2010). standard of salt requirements for the human consume. From the analysis made in INSPI lab compared with the data of this investigation in what about Iodine is concerned they have similar results, the standard says that it must have from 20 to 40 ppm.; the 7.5% has a low value before the standard, the 90.06% are inside of what is required and the 2.78% is over the established parameter.
