Even has come to have their own monument called "El choclo". This grain has been becoming an object of homage and celebration by the people of this area. The sangolquileños, valuing the ancestral knowledge accumulated by generations. One is the gastronomy, around which have been formed as the party rituals chagra. Sangolquí previously was considered the breadbasket of Quito. Currently corn production is decreased due to the use of land for housing construction, but the symbolic aspect is maintained. Corn Feasts are held annually. This and gastronomy are fundamental aspects of their cultural identity. In this article the evolution of the cultural identity of Sangolquí around the corn from the results of historical research and fieldwork with older people the place is presented. |

Se ha convertido en un sitio turístico muy visitado por sus paisajes, tradición y cultura. En este proceso el maíz ha jugado un papel importante. Este producto con el transcurso de la historia, ha trascendido su valor alimenticio, para transformarse en un símbolo de identidad cultural. Inclusive, ha llegado a tener su propio monumento denominado “El Choclo”. Este grano, ha ido convirtiéndose en objeto de homenaje y fiesta por parte de la población de esta zona. Los sangolquileños, valoran los saberes ancestrales acumulados por generaciones. Una de ellas es la gastronomía, en torno a la cual se han conformado rituales como la fiesta del chagra. Anteriormente Sangolquí fue considerado el granero de Quito. Actualmente la producción del maíz se ha disminuido debido al uso de los suelos para la construcción de viviendas, sin embargo el aspecto simbólico se mantiene. Las Fiestas del Maíz se realizan anualmente. Esto y la gastronomía constituyen aspectos fundamentales de su identidad cultural.
