The tests were conducted in the FACIAG-UTB Grain Laboratory, which has everything necessary, including a dryer, cleaner, hulling, and polishing equipment. Various parameters were studied, such as: rice hull weight (g), water content (%), whole rice weight (g), milled rice weight (g), rice flour weight (g), broken rice weight (g), whole grain weight (g), and starch and protein percentages (%). The Kruskal-Wallis method, an unconventional approach that evaluated differences in averages, was used for the data analysis. The findings on whole grain rice, measured in grams, show that the L-17 variety weighs more than 606.96 g, representing 60.7% of the whole grain. Regarding the amylose content, the SFL-11 plant type had a percentage of 32.23%, while the L-17 had a level of 30.90%, suggesting that both types have similar amounts of this substance. Regarding protein, the promising L-17 variety averaged 8.30%, compared to 8.50% for the commercial SFL-11 variety, suggesting that there is no significant difference in protein content between the two varieties.

El objetivo de este estudio fue analizar la calidad del arroz L-17 en la provincia del Guayas, en la región de Simón Bolívar. Se implementaron dos tipos de arroz, L-17 y SFL-11, con tres repeticiones de cada uno. Las pruebas se realizaron en el Laboratorio de Granos de la FACIAG-UTB, que tiene todo lo necesario, como secador, limpiador, descascarado y pulido. Se estudiaron diferentes medidas como: peso (g) de piel de arroz, cantidad (%) de agua, peso (g) de arroz entero, peso (g) de arroz molido, peso (g) de harina de arroz, peso (g) de arroz partido, peso (g) de granos completos, y porcentaje (%) de almidón y de proteína. Para el estudio de datos, se utilizó el método de Kruskal-Wallis, un enfoque no convencional que evaluó las diferencias en promedios. Los hallazgos sobre arroz entero, medidos en gramos, muestran que la variedad L-17 tiene un peso mayor de 606,96 g, representando el 60,7 % del grano íntegro. En relación a la proporción de sustancia amilosa, el tipo de planta SFL-11 presentó un porcentaje de 32,23 %, mientras que el L-17 mostró un nivel del 30,90 %, lo que sugiere que ambos tipos tienen cantidades parecidas de esta sustancia.
