Sumari:Gastronomic tourism has become a key tool for the economic and cultural development of local communities. This study analyzes the potential of gastronomic tourism in the canton of Mocache, Province of Los Ríos, Ecuador, aiming to identify its importance, categorize its gastronomic offerings, and propose promotion strategies. Using a mixed-method approach, surveys were conducted with 381 residents, along with interviews with key stakeholders, direct observation, and the implementation of digital promotion strategies. The results show that typical dishes such as Encanutado de Bocachico and Hornado de Chancho have high cultural and touristic value, although weaknesses were identified in promotion and service quality. It is concluded that gastronomic tourism can be a driver of development for Mocache, provided that actions are taken to improve infrastructure, strengthen promotion, and encourage community participation.
