Mediante una exhaustiva revisión bibliográfica, donde se recopilo, selecciono y analizo artículos, documentos, textos, libros y páginas web que sirvieron para dar las bases teóricas del tema a tratar. El proceso de cosecha y las técnicas utilizadas influyen directamente en la calidad y rentabilidad del cultivo de palma, cuando se cosecha un fruto verde la cantidad de aceite disminuye, si se cosecha un producto sobre madurado el aceite es acido. Identificar el momento adecuado de corte garantiza una mejor producción con calidad. Es importante realizar un transporte adecuado para minimizar la perdida de fruto.
