| Περίληψη: | Rice cultivation began about 10,000 years ago in the humid regions of tropical and subtropical Asia. India may be the country where this cereal was first cultivated. Oryza sativa is the most important cereal in developing countries and is considered a staple food for more than half of the world's population. Certain factors have been identified that determine grain quality, and it is precisely in the milling process that these parameters are recognized. Studies have shown that quality begins with the control of the culture itself and depends on whether it reflects a higher piling index. With these notions, it is established as a research question: What are the industrial rice milling processes and the commercialization of this production, which gives rise to the general objective of determining the industrial rice milling processes and their commercialization. The methodology of this work is of qualitative scope since it provides data that describe the nature of the studied subject from the observation and validation of the events of a certain phenomenon. Giving as main conclusion that through this case study, we were able to discover the intermittent mismanagement of the industrial process of rice milling, especially among small farmers engaged in rice production in rural areas of Babahoyo Canton, and generating recommendations such as producing an in-depth study that provides details and opportunities for improvement of the process of rice milling industry. |
