Resumo:ABSTRACT The present research work was carried out due to the problem of determining how the quality of tourist services influences gastronomic tourism in the city of Babahoyo in order to propose a quality management system for tourist services to promote gastronomic tourism in the locality. By means of this research work, the factors influencing the variables of the proposed topic, that is, the quality in the attention of tourist services and gastronomic tourism, are exposed bibliographically and a methodology based on descriptive research and with a qualitative and quantitative approach is proposed to determine the facts that influence the problem and collect through the techniques and instruments of research, the necessary information to generate the due conclusions and recommendations, as well as the proposal of a proposal that allows solving the exposed problem. The results obtained point to the possible use of quality management systems based on ISO 90001:2015 by the owners of gastronomic tourism sites in the city of Babahoyo in order to improve the quality of service offered to tourists arriving in the town and thus enhance both tourism and make the gastronomy of Babahoyo known to visitors.
