description SUMARY Enzymes are amino acid polymers that direct catalytic activity in various biological systems, thanks to the ability of chemical accelerations. The enzyme that hydrolyzes phytic phosphorus (or phytate) is called phytase. The objective of the research was to generate published information on the use of protease enzymes in broiler chickens. This documentary research work was developed based on the collection, sequence and review of articles, executed on protease enzymes, on issues related to the feeding of broiler chickens, especially on the proper use of enzymes. The information was collected between March and April of 2019. The methods used were based on response analysis, which made it possible to obtain results from written works and online publications. On the other hand, bibliographic and documentary research have shown the benefits of productive behavior, since they also act on non-starch polysaccharides (PNA) in diets based on barley and wheat. Thus increasing the nutritional quality of the feed acting as a supplementary source of energy and fats and oils. Diets with DDGS have a better performance in chickens fed with 25% DDGS weighing 1096 grams in the growth phase. The inclusion of 25% of DDGS and the 10% reduction in protein, amino acids and energy did not show any effect on bird performance. The use of a protease not only contributes to increasing the profitability of a broiler producer, but also has a positive impact on the environment, helping to improve the quality of the litter and the associated associated parameters of well-being, of great economic importance. Key words: Enzymes, proteases, broiler chickens and productive parametersRESUMEN Las enzimas son polímeros de aminoácidos que dirigen la actividad catalítica en diversos sistemas biológicos, gracias a la capacidad de aceleraciones químicas. La enzima que hidroliza el fósforo fítico (o fitato) se llama fitasa. La investigación tuvo como objetivo generar información publicadas sobre el uso de enzimas proteasas en pollos de engorde. Este trabajo de investigación documental fue elaborado en función a la recopilación, secuencia y revisión de artículos, ejecutado en enzimas proteasas, en temas vinculados con la alimentación de pollos de engorde, en especial sobre el buen uso de las enzimas. La recolección de información se la realizo entre los meses de marzo y abril del 2019. Los métodos usados se fundamentaron en análisis de respuesta, los cuales posibilitaron sacar resultados de trabajos escritos y publicaciones en línea. Por otra parte, investigaciones bibliográficas y documentales, han demostrado los beneficios sobre el comportamiento productivo, puesto que también que actúan en los polisacáridos no almidonados (PNA) en dietas a base de cebada y trigo. Aumentando así la calidad nutritiva de los piensos actuando como fuente suplementaria de energía y grasas y aceites. Las dietas con DDGS tienen un mejor desempeño en pollos alimentados con 25% de DDGS un peso de 1096 gramos en la fase de crecimiento. La inclusión de 25% de DDGS y la reducción de 10% en proteína, aminoácidos y energía no mostró ningún efecto en el desempeño de las aves. El uso de una proteasa no sólo contribuye al aumento de la rentabilidad de una empresa productora de pollos de engorde, sino que también tiene un impacto positivo sobre el medio ambiente, ayudando a mejorar la calidad de la cama y los consiguientes parámetros asociados de bienestar, de gran importancia económica.
