| Summary: | The present research work is of great importance, since it makes known to the consumer or producer the quality of the grain of new rice cultivars. The objective of this research was to determine the milling quality of the promising line of rice L-37 in the Yaguachi area, province of Guayas. Two rice cultivars with three replications were used: L – 37 and SFL – 11. In this process, the Grain Laboratory of FACIAG-UTB was used, which has equipment that was used to dry, clean, hull, polish, cleaning dust, rice, measure moisture content and amylose content. The variables evaluated were: Weight (g) of husks, percentage (%) of moisture, weight (g) of brown rice, weight (g) of white dough, weight (g) of dust, weight (g) of broken grains - rice, weight of whole grains, whiteness, percentage (%) of amylose and protein content. For the statistical analysis, the non-parametric design of Kruskal Wallis analysis was used, including the comparison of means. As for the results, in relation to the classified rice or whole grains expressed in grams, they showed that the sample of the commercial variety SFL-11 registers a higher weight, presenting 661.40 g that transformed into percentage would be 66.14 % of whole grains. Based on the amylose content, it is observed that in the commercial variety SFL-11 it had a value of 21.91 %, while the promising line L-37 obtained a value of (21.77 %), concluding that the amylose contents are similar between the cultivars. On the other hand, the promising line L-37 presented an average of 42.75% whiteness; while the commercial variety SFL-11 obtained an average of 40.75% whiteness. Regarding proteins, it was determined that the promising line L-37 has an average of 9.47%, while the commercial variety SFL-11 has an average of 9%, observing that there is no protein difference between the two cultivars.
