Sammanfattning:This document was developed for the purpose of studying the protein concentration of rice grains at the level of retail collection centers in the Babahoyo area. To be able to analyze and genérate information regarding the quality of the grain that is marketed in a retail way in the city, due to the lack of information and little knowledge about the population regarding the importance of the industrial (milling capacity) and grain quality. of rice. Referring to the nutritional value, this gives us benefits since, being a source of carbohydrates, it provides us with energy, it also has average percentages of starch, proteins and vitamins, so uncertainty arises when questioning whether the harvested product that arrives a commercial presents the appropriate values to be able to be marketed and consumed by the local population, this in order to also raise awareness of the management of the crop by the producer, this would allow us to raise the industrial quality of our product and in turn meet the standards of trade in performance and quality for each regional consumer. It is clear that technological advances and work carried out by professionals with the aim of generating new varieties over the years have improved production levels, however, yields in industrial quality remain at 67% today, so it is It could allude that both in the management of the crop and in the industrialization process, strict management must be carried out.
