The little administrative knowledge on the part of the owner and work team does not allow them to achieve great results that generate extremely successful income for the Flor Del Azuay Bakery and Pastry Shop. This case study was carried out focused directly on the production area in order to reduce unnecessary expenses and at the same time, with good investments in raw materials, achieve good production, which is carried out daily. The Flor Del Azuay bakery and candy store at a business level is located within SMEs, which is of utmost importance to carry out an adequate administrative process, responsibly fulfilling each of its stages in order to achieve a minimum margin of error in its production. which they do daily because they produce essential food products. A descriptive methodology is carried out which allows relevant information to be grouped, attaching the instruments used such as the interview directed directly to the owner and the surveys to the workers
