This case study was carried out focused directly on the production area in order to reduce unnecessary expenses and at the same time, with good investments in raw materials, achieve good production, which is carried out daily. The Flor Del Azuay bakery and candy store at a business level is located within SMEs, which is of utmost importance to carry out an adequate administrative process, responsibly fulfilling each of its stages in order to achieve a minimum margin of error in its production. which they do daily because they produce essential food products.
