| Sumari: | The purpose of this research was to enhance the dairy processes laboratory of the Agroindustry Major through the regulation of the pasteurized milk by getting the Sanitary Notification, whose legal process enhances the quality and safety of the product. This was based on bibliographic research, review of technical and instructional regulations, management of software tools or the ECUAPASS platform. To meet the requirements of this process, 100 liters of pasteurized whole milk were processed, from which six samples of 1000 ml were extracted for the respective physicochemical and microbiological analysis in the accredited ECUACHEMLAB laboratory. The physicochemical results obtained are within the parameters of the nutritional information to be recorded on the label, also it was found that the stability sheet of the product indicates 3 days as expiration date. Subsequently, the corresponding technical and legal procedures were carried out to obtain the health notification, which will remain in effect for 5 years. |
