| Riassunto: | The objective of this integrative project was to develop an operation and maintenance manual for the KK-P-80 Popsicle ice cream machine for the dairy research laboratory of the Agroindustry career at the Technical University of Cotopaxi, in the academic period October 2021-March 2022. It was elaborated by means of qualitative methodology, using bibliographic, descriptive and explanatory research. Likewise, the instruments and techniques used were observation, scientific reading, file and interview, which served as an aid in the collection of information on the object of the project and the solution of the problem posed. In such a way that the machinery was acquired and a demonstrative practice was executed on the elaboration of creamy popsicles with passion fruit flavor obtaining as results an adequate formulation of the mixture according to NTE INEN 706: 2005, which allowed the elaboration of a safe and quality product that complies with the physical characteristics of popsicles. Likewise, the balance of matter of the churning and freezing of the ice cream and the energy balance of the antifreeze agent used in the process were determined, thus making the pedagogical application of the machine within the dairy research laboratory. In addition, the operation and maintenance manual (routine, preventive, predictive and corrective) was developed, in which the basis of the machine was identified, such as the generalities, requirements, parts and mode of operation, together with the safety measures that must be considered to ensure the physical well-being of the personnel in charge, Thus, the manual became a guide for the use of the KK-P-80 machine in subsequent practices, allowing the students of the Agroindustry career to relate the theoretical knowledge with the practical ones. |
