Summary:The current integrative project elaboration implies several contents, what contribute to the hard 1ce cream processing machine correct handling. The present work also refers to the different maintenance, which are routine, preventive, predictive and corrective that are required to avoid the machinery deterioration, as well as it contributes to the people description and adequate knowiedge use, who are going to handle it, with the aim at reducing occupational risks. Into agroindustrial engineer integral formation, it 1s necessary to know, analyze and manipulate the equipment and useful machinery his profession, in order to complement the knowledge of theoretical learning and the experimental part. By analyzing the necessary equipment for the theoretical learning complementation with the experimental and practical part, it is contributing to the Technical University, which is added the equipment innovation lack with the optimal characteristics for technical and pedagogical learning; thus, when implementing the hard ice cream processing machine, they are verified the equipment benefits in agribusiness professionals comprehensive training at the Cotopaxi conjunction with other complementary machinery in the dairy products manufacture. Further, the current work contains an experimental activity about the ice cream different flavors elaboration; this case, it was elaborated a hard ice cream or blackberry and strawberry gelato that it demonstrates its equipment functionality and benefits, which includes the respective material balance calculations required in the production process. Finally, it is mentioned that the product elaborated in the aforementioned practice, it is a quality product, it required for the consuming public good nutrition.
