Aplicaciones tecnológicas de la pasteurizadora de placas en procesos de transformación Agroindustrial.

The project aims to develop an operation and maintenance manual for the plate pasteurizer, located in the academic laboratory of Agroindustry at the Technical University of Cotopaxi, through demonstrative and experimental practices to strengthen student learning. The project contains the management and operation of the equipment, the parts that make up the equipment, and the different types of maintenance that must be developed, such as routine, preventive, predictive, and corrective maintenance, detailed step by step in the document. It also contains the maintenance record that must be carried out on the equipment before, during, and after its use. Finally, we developed three demonstrative practices to demonstrate the correct use of the plate pasteurizer, which are: the elaboration of orange nectar where we obtained 50 liters of product , the soluble solids that the elaborated product presents are 9.1 ° Brix, In the preparation of the lemon nectar, we got 48 liters of the product and the soluble solids were 6.3° Brix and finally, in the jamaican drink, a production of 50 liters, and the soluble solids were 11.2° Brix subjected to current INEN regulations. The corresponding sensory evaluations of the produced products are then provided. The project's development aims to effectively produce future research that may be conducted in an academic laboratory, fostering learning among students, instructors, and tactical allies to create projects using a plate pasteurizer and new products.
