Summary:The following thesis work was carried out in the Dairy Products Company Pinar del Río. In this research, it is executed a diagnosis of the production processes of the ice cream and it is analyzed the deficiencies of each activity. The overall objective of research is to analyze the process of ice cream production. For fulfilling with this objective, we outlined the following specific objectives: to know the methodology for the preparation of ice cream, to describe the process of ice cream production using techniques for recording information, to make the calculations and to determine the point limitation to the process and the necessary resources, as well as detect the main problems to propose solution for them. The main used tools were: the interview, direct observation, the different flow diagrams of processes (OTIDA, OPERIN and diagrams ride), the Gantt chart, the cause-effect diagram, the brainstorming and Experts´ Method, as well as the bibliographic review through the consultation of documents and the search in the internet.
