Crynodeb:The present Project had as purpose the manual attainment a use and maintenance manual for the use sausage, in order to enhance the research Agroindustry career laboraty from Cotopaxi Technical University, allowing students to make the team correct use, generating necessary skills and competencias for their profesional training. The manual has all the specifications its component parts, the sausage tie use and maintenance, thus compiling the information on the operation basic principles and the several maintenance actions to prolong the useful life, it followed with the sausage tie proper use practices pedagogical demonstrations. Getting thus, the correct use of sausage tie from the location, until the start-up. Next, it was elaborated the maintenance manual, which consists of following maintenance types, which they were applied and were routine, preventive, and corrective maintenance, the same ones that detail their respective procedures step by step and each execution frequency. Once, it established the guidelines for the sausage tying machine use, operation and maintenance, it was made the demonstrative pedagogical practices, which were elaborated three different types of agro-industrial products, which were beer chorizo, grill chorizo and smoked pork chorizo by using the organic citrus extracts inclision and beet juice, all is subject to INEN regulations.
