Özet:The subject of the research "Evaluation of the harvest and postharvest performance of two varieties of chocho (Lupinus mutabilis Sweet), Andino and Guaranguito at different harvest indexes in the chocho bean in Cotopaxi province, period 2020-20201". We worked with a randomized complete block experimental design, consisting of a (DBCA) with a 2*5 Factorial Arrangement, with a total of 10 treatments with 3 replications which is equivalent to 30 experimental units in the laboratory phase. For the field phase we worked with a randomized complete block experimental design, with a 4*2 Factorial Arrangement, with a total of 8 treatments with 3 replications, which is equivalent to 24 experimental units. In the field phase, the highest number of main inflorescences was determined for day 120 in the variety INIAP 451 Guaranguito with an average of 0.71. The number of lateral inflorescences of the variety INIAP 451 Guaranguito obtained an average of 12.79 number of flowers. The INIAP 451 Guaranguito variety had a 120-day central axis length of 24.19 cm and an average of 16 pods for both varieties. After carrying out the process of unbittering the grain in both tender and dry chocho, the test was installed in the laboratory of the University where the following indicators were evaluated as the value for unbittered grain weight for the variety INIAP 451 Guaranguito in the cream index 2.5Y8/2 (210 days) has a weight for the grain of 1.03 g. The index with the highest grain firmness for the variety INIAP 451 Guaranguito has a weight for the grain of 1.03 gr. The index with the highest firmness in unhulled grain is cream 2.5Y8/2 (210 days) with 5.19 lb-f/in2. The values for pH indicate that the yellow index 5Y8/2 (210 days) throughout the storage process after unstarching the chocho grain maintained a value of 7.59. The percentage of moisture is higher for the cream index 2.5Y8/2 (210 days) with 68.66%. The variety with the highest percentage of alkaloids was INIAP 450 Andino with 0.60%. While pod and seed color was identified using the "Munsell" plant tissue color chart, this evaluation indicates the harvest and postharvest process of the different grain indices in chocho.
