| Resumo: | The theme: "EVALUATION OF BEHAVIOR IN POST- HARVEST BLACKBERRY (Rubus glaucus) WITH THREE MODIFIED ATMOSPHERE AND THREE STORAGE TEMPERATURES. LATACUNGA - COTOPAXI", had the following objectives: To determine the best type of modified conservation blackberry atmosphere. Determining the best storage temperature to improve the quality of default of Castile. To analyze the costs per treatment. Two factors and evaluated, the first modified atmospheres that were ziploc bags , trays covered with roll pack, trays covered with perforated covers, the second factor was temperature to 4° C, 8° C and room temperature. Split Plot Design (DPD) and the results were interpreted by analysis of variance (ANOVA) and Tukey test at 5% for sources of variation were significant at 5% was applied. The variables evaluated were fruit weight, firmness, pH, soluble solids and disease incidence. The results were: The storage temperature directly affects the physical characteristics of the blackberry, being the room temperature where most weight loss occurred, lower shelf, color degradation, increased Brix and pH decrease. In the present research has obtained the final conclusion that the optimum temperature for the conservation of default is the number two (4° C) which helped keep most of the features of the blackberry for 8 days for consumption human; so the modified atmosphere that permitted better results was the number one (ziploc bags) that as the temperature kept most of the features under study at the same time, is profitable to implement such strategies only for large volumes due to the high investment cost is $ 2.48 / day. |
